Mac n Cheese

Mac n Cheese is comfort food for many of us. Many families have their own version of Mac n Cheese with some secret ingredients. Al-dente pasta cooked in a sauce is a simple and great way to escape from the daily diet. With less effort, you can whip up a great main course with a lot of varying options by sauce, and toppings.

With a small space in a hostel room, the most you can keep at max is an induction stove, a frying pan, a plate, a knife, a bowl, and two spoons. Armed with those, I planned to switch the boring Thursday dinner with a homestyle one-pot pasta meal.

The Ingredient:

  1. Milk – 500 ml
  2. Pasta shell – 200 gm
  3. Cheese – 1/4 Cup or 3 cheese slices
  4. Bell Pepper – 1 medium*
  5. Onion – 1 medium*
  6. Paneer – 200 gm*
  7. Oil/Ghee – 2-3 tbsp**
  8. Salt – as per taste
  9. Pepper – as per taste
  10. Chilli flakes – 1 tsp
  11. Pizza oregano seasoning – 2 packets***

 

* Choice of vegetables and meat is up to you. Add what you like.
** Vegetable oil can be used. PS Ghee equals flavor.
***Use the seasoning for shortcuts. Herbs are better though.

Procedure

  • In a saucepan add Ghee and heat it.
  • Add your desired vegetables and meat to give them a quick fry.

  • Season them with salt, pepper, and chili flakes. Reminder! You are going to season the milk too.
  • In a saucepan add a little water to create a small layer. Put it on the heat.
  • As it begins to bubble add milk.  This prevents milk from burning or sticking to the pan
  • Season milk with salt and pepper. It is necessary as you are going to cook your pasta in it. PS, keep it low

  • As it begins to boil, add pasta and cook at low heat.
  • Cook the pasta till Al-dente. You may need to add a little water if the sauce becomes too dry.
  • Add back the sauteed vegetables and meat.

  • Kill the heat and add cheese. Mix it well
  • Add the seasoning and herbs at last and mix it well.

  • Enjoy as a single pot and dive in.
