Eggs are one of the superfoods. Eggs are essential in the diet. They are rich in protein and HDL also called good cholesterol. They are easy to cook and a great alternative to mess food. Egg
Bhurji is a classic and doesn’t need a large number of ingredients. It is well paired with pav, buns and, rotis and can be eaten as it is. It has been one of my go-to recipes when I have food cravings in midnights or want a light breakfast.

The Ingredients:
Whole eggs - 2 Milk 1/2 - 1+1/2 tbsp* Onion diced 1/2 Tomato diced 1/2 Butter 1 tbsp Green Chilies finely chopped 2 Coriander leaves few leaves* Lime 1/4 Zest of a lime Salt and pepper as per taste
* add milk as per the creaminess you desire.
* can be substituted with parsley or chives to get a different note.
** you can add coriander powder, chat masala, red chili powder
and other spices but it may meddle with the clean flavor of the eggs.
***if you want to go for more rich flavor add cream instead of milk,
a lot of butter.

A Frying /Sauce Pan A Glass or Bowl A Fork A Knife An Induction Stove
Method
- Whisk up the eggs with milk in a glass or bowl.
- Heat up the butter in the pan till it gets foamy.
- Add onions and green chilies, fry them till onions turn translucent.
- Add tomatoes and cook till they become soft.
- Add salt and pepper, (you can added the spices as per your taste and cook them a little)
- Pour the eggs into the hot pan,lower the heat and whisk the eggs repeatedly to give a creamy texture.
- Switch off the heat when they are a little wet than your desired consistency, add the herbs, lime zest and juice of 1/4 lime.
- Serve them with toasted pavs.
